Mezcal Educational Tours

Authentic Mezcal Distillery Tours in Oaxaca, Southern Mexico

Welcome to Mezcal Educational Tours, the original and most specialized provider of mezcal distillery tours in Oaxaca. What began as a passion project at the dawn of the mezcal boom has become a deeply respected educational experience for visitors from around the world.
We were the first company in the State of Oaxaca to offer dedicated mezcal tours, launching our excursions when interest in mezcal was still in its infancy. Today, as global enthusiasm for agave spirits continues to grow, we remain what we have always been: specialists — not general tour guides adding mezcal as a side offering.
Book Your Mezcal Tour

A Passion, Not a Mass Operation

Our Oaxaca mezcal tours are a full-time passion, though technically a part-time “job.” For that reason, availability is limited.
If you’re interested in joining one of our excursions, we strongly recommend contacting us as soon as your travel dates are known. Waiting until you arrive in Oaxaca — or reaching out only a few weeks prior — may limit availability.
That said, if circumstances have delayed your inquiry, we will certainly do our best to accommodate you on a visit to traditional mezcal palenques producing fine agave distillates in the hills and valleys surrounding Oaxaca.

Recognized Authorities — Not Tour Guides

Our mezcal distillery tours are conducted exclusively by Oaxaca residents:

  • Alvin Starkman, a social anthropologist specializing in Oaxacan culture and agave traditions

  • Randall Stockton, a fixture in the American bar industry for over 20 years and an expert in distilled and fermented beverages

Neither Alvin nor Randall are conventional tour guides. They are seasoned professionals and recognized authorities on local distilled and fermented drinks, including mezcal and pulque.

Both are licensed by the federal government of Mexico to lead educational excursions relating to agave distillates and traditional fermented beverages. Their expertise extends far beyond tasting notes — they provide cultural, historical, agricultural, and environmental context.

What Makes Our Mezcal Tours Different?

1. True Specialization in Oaxacan MezcalWe focus exclusively on mezcal and related agave traditions. Our tours emphasize:

  • Wild vs. cultivated agave species

  • Harvesting practices

  • Roasting, fermentation, and distillation techniques

  • Clay pot vs. copper still production

  • Regional variations and flavor nuances

  • Cultural adaptations tied to mezcal production

This is not a bar crawl. It is a comprehensive, immersive educational experience.

2. Environmental Expertise & Responsible Tourism

Oaxaca’s mezcal boom has created both opportunity and strain. We address environmental challenges directly, including:

Wild vs. Cultivated Agave

Many traditional mezcals rely on wild agave varieties that can take 15–30 years to mature. Overharvesting poses real risks to biodiversity. We explain:

  • Which species are endangered

  • How replanting initiatives work

  • The ecological impact of monoculture farming

  • The balance between tradition and sustainability

Water & Waste Management

Traditional palenques often operate in remote rural areas. We discuss water usage, vinaza (distillation waste), and emerging eco-conscious practices.

Climate Pressures

Changing rainfall patterns and soil degradation are reshaping agave cultivation. Understanding these realities deepens appreciation for every bottle produced.

3. Supporting Ethical Families

Our tours prioritize family-run, traditional palenques. When you visit with us:

  • You enter producers’ homesteads in small villages rarely visited by mass tourism.

  • You meet multi-generational mezcalero families.

  • You taste in the very spaces where agave is roasted and distilled.

Your participation directly supports rural Oaxacan families who rely on mezcal production for their livelihood.

We believe responsible tourism means ensuring that economic benefit flows to the producers themselves — not just intermediaries.

4. Cultural Immersion Beyond the Spirit

Mezcal cannot be separated from Oaxacan identity. Our excursions explore:

  • The ritual uses of mezcal

  • Its relationship to food traditions

  • Pulque and other fermented beverages

  • Social customs tied to agave

You leave not only understanding how mezcal is made — but why it matters.

Oaxaca: The Perfect Setting

In July 2022, Travel + Leisure named Oaxaca the Best City in the World, highlighting its cultural richness, cuisine, and artistry.
We are proud that our mezcal educational tours were recognized among the region’s standout experiences — praised for authenticity, depth, and cultural integrity.
Oaxaca is not simply a destination. It is a living cultural landscape — and mezcal is one of its most profound expressions.
